Upon completing mission 45 which will be available after finishing Frieza Saga, you’ll get access to Ultimate Jewels which can be found in the premium collection. Z rank is a tricky one, there are rumors you can get one by getting lots of points, doing energy shares and chaining but it’s still not that easy to pull off as it may seem due to enemies low health. Your performance during the mission is ranked from E (when you fail) to Z. Some harder ones can be done in co-op which is recommended, as the AI tends to make some poor choices in the midst of battle even when they're trained.
